The Potato Coop food truck is expanding and will open a restaurant in the town of Susquehanna in 2022.

For eight years, Allen Peck couldn't find anyone who didn't like fresh-cut fries.

This revelation prompted him to open Potato Coop, a food truck that specializes in supplying a variety of potatoes, including French fries, fries and dumplings.

It turns out that Parker did a good thing. Potato Coop food trucks and trailers have always been in demand for corporate events, gatherings, and parties in Central Pennsylvania.

Next year, the brand will open a sit-in restaurant in Susquehanna Union Green, which is a pedestrian-friendly development project in Susquehanna Township.

"For three years, we have been looking for a restaurant... We need a larger operating base to handle our food truck business," Peck said.

Vartan Group, Inc.'s 58-acre project is being developed at the corner of Linglestown Road and Progress Avenue and includes housing, office space, retail and restaurants, and 17 acres of community space. Panera Bread and Wendy's opened in the development zone earlier this month.

Peck said he learned about Susquehanna Union Green by reading about ZeroDay Brewing Co. opening a restaurant in the complex next year. So he contacted the Vartan Group.

"They reviewed our website, and many people on their team are familiar with us," he said.

This restaurant will enable Peck and his business partner Lisa Heintzelman to expand Potato Coop beyond the discount. They will continue to operate the mobile terminal business and use the restaurant as a canteen for food preparation.

Since construction delays are mainly related to supply chain issues, Peck said that the restaurant may not be completed until summer. It will provide indoor and outdoor seating and a Potato Coop favorite menu including French fries.

Peck said that in addition to mac n'cheese, Philadelphia cheese steak and pulled pork, they will add more types of French fries. Otherwise, he said they plan to add more burgers, homemade sauces, baked potatoes and smoked chicken wings.

At this time, Peck said the restaurant will be open 7 days a week.
